South Tyrolean Speck is a slightly smoked product and has to mature for at least 22 weeks. Since 1992 the kind of production of the South Tyrolean Speck has been protected by the EU. The designation PGI guarantees that only in South Tyrol the Speck can be produced in this typical local way.
Around 30 % of the South Tyrolean Speck are exported to Austria and Germany. This is one of the reasons why the consortium organises tastings in more than 200 sales outlets in the two neighbouring countries in order to raise the profile of the tasty smoked ham once again.
